My Recommendation how to spend 7 days in Nepal

I recommend heading out to Chitwan first for a couple of days(2 nights 3 days) before moving to Pokhara. In Stunning Pokhara, there is plenty of outdoor adventure stuff to do, including paragliding, zip-lining, rafting and kayaking.

Likewise, the Kathmandu has the best cultural stuff, at least as it manifests in architecture and temples. This city has lots to offer and could keep you occupied for the week vacations. There are 7 unesco sites located in Kathmandu valley which you visit around 2-3 days. Remaining 3 to 4 days you can go bungee jumping or paragliding. Not only that canyoning, rafting is possible on 3 to 4 days and rest of the days is for Kathmandu City tours.

An alternative for adventure stuff is a day trip – or overnights – to the Last Resort for bungee jumping, canyon swing, canyoning and rafting.

Keep in mind you might want to relax after the trek rather than have a full(tight schedule). I suggest a flexible approach rather than having a fixed(tight) itinerary.
